If you prefer less sweet desserts, reduce powered sugar to 2 tablespoons. White sugar is more important for a smooth texture, powder sugar for stabilization as you pipe the cream, but that can be reduce slightly to 1/3 cup if you prefer. METHOD: Beat together butter and sugar with an electric mixture until fluffy. Add eggs and vanilla. Whisk together the flour, cocoa powder, and salt. Set aside. Slowly add flour mixture to butter mixture in thirds, until well combined. Form dough into a ball, and flatten into a disc. Refrigerate for 1 hour. Roll out dough on a well-floured surface to about ¼ ". Cut round cookies and transfer to a cookie sheet lined with parchment. Pop in freezer for 5 mins to preserve their shape when they bake Bake 350F for 8 mins until set For Cream: In an electric mixer whip together cream, sugars, and vanilla. Whip until stiff peaks form. Transfer to a pastry bag with a large star tip. To assemble place cookies on their backs. Top one with a piped nest of cream on top 2 rows. Place in the freezer, and then place the other cookie gently on top, press down gently to adhear. Freeze sandwiches a minimum of two hours. Keep frozen until ready to serve. Enjoy!

This will be your work surface. Most store-bough puff pastry sheets come in 3-folded panels. This is the best kind to buy for this. Unfold and the panels and roll out slightly. On the center panel, spread fig jam to cover the center panel surface. Then top the jam with the sliced brie. On the side panels, cut ¾ “ (19 mm) strips on each side making sure you have equal number of strips on each side. Then alternating the strips, bring them to the center panel, to cover the jam and cheese, overlapping each one, forming a rustic braid. NOTE: If making this ahead of time, wrap up in the parchment paper, then freeze on tray until firm, Then wrap tightly in foil and remove tray and keep in freezer until ready to serve. Before baking brush the egg wash with a pastry brush all over the braid and bake for 25 mins until puffed up and golden brown. Transfer braid to a cutting board. Sprinkle with chopped walnuts and serve with knife for easy slicing.   BETH'S SAUSAGE AND CHEESE PINWHEEL RECIPE Serves 4-6 guests (makes 18-20 pieces) INGREDIENTS: 2 hot Italian Sausage links, cooked and crumbled 1 tsp (5 ml) of Italian seasoning 2/3 cup (160 ml) of Italian Blend Cheese 1 egg, well beaten METHOD: Preheat Oven to 400F (200C) Roll out pastry on to a floured surface. Roll over pastry to assure panel seems are tightly sealed so it won’t break apart. Brush egg wash across short side of pastry 1 inch (2.5cm) from the end this will be to seal the seam once we roll up our pinwheels. Sprinkle cheese across pastry. Sprinkle Italian Seasoning on top of cheese. Add crumbled cooked hot Italian sausage. Roll pastry into a log being careful to roll tightly so filling does not spill out. Seal tightly at ends. Slice into ½ inch (13 mm) rounds, place on parchment lined cookie sheet and bake 12-15 mins until golden brown and puffed up.   BETH'S MUSHROOM TARTELETTE RECIPE Makes 12 tartelettes INGREDIENTS: 2 tbsp (30 g) butter ¼ cup (60 ml) shallots, minced 1 ½ cups (350 ml) cremini mushrooms, diced 1 tsp (5 ml) fresh thyme salt and freshly cracked pepper to taste 1 tsp (5 ml) Worcestershire sauce 2 tbsp (30 ml) Italian Blend cheese METHOD: Preheat oven to 400F (200C) Melt butter in a large skillet. Sauté shallots until soft, add mushrooms and sauté until browned. Add thyme, salt and pepper, and Worcestershire sauce. Allow to cool slightly. Cut pastry into 3x3 (7.6cm x 7.6 cm) squares. Fit squares into a mini muffin tin. Fill with 1 tsp (5 ml) of the mushroom mixture, top with a sprinkle of cheese. Bake for 15-20 mins. Top with a thyme sprig and serve.

In this special edition of the IKEA Home Tour Series, the Squad visits Diego Gonzalez-Zuniga, from the men’s fashion and life style blog Diego Downtown at his 2-bedroom apartment in Washington, D.C.. Diego loves the location of his apartment but feels that his living room doesn’t meet his entertaining needs, nor does it reflect his personal and creative style. Being that the living room is Diego’s all-purpose room where he hosts large groups of friends and does his work, it’s important that the room reflects who he is, as soon as his friends walk in through the door. With just 1 day to do the makeover, the IKEA Home Tour Squad started off quickly by adding a FJÄLLBO TV unit which provides a nice rustic look and offers plenty of storage. A HOLMSUND sleeper sectional, that just begs Diego to jump onto it and get comfortable, provides plenty of under seat storage along with plenty of room for Diego’s friends to sit. The Squad also added plenty of greenery, wall décor, and handmade KLOVAN pendant lamp shades for Diego’s lights to really tie the room back to Diego’s personal style. Since Diego loves entertaining guests, the Squad added a BESTÅ Storage combination system with plenty of shelf space to act as a new bar, complete with HEDRELIG red wine glasses and DIODER led 4-piece light strips with a wall mounted control that lets Diego set the mood. Now Diego and his guests have the perfect spot to make and enjoy cocktails, he just needs to add a little music and the room is ready for a dance party! Meanwhile prep the "Italian Vegetables" vegetables. Sautee in batches starting with the pepper first for 2 mins, then the zucchini for 2 mins and then the tomatoes. Once vegetables soften, add the garlic cook for 1 min, then add the pesto, combine with the veggies and season with salt and pepper to taste. Keep warm over low flame. Place cornflakes in a resealable plastic bag and crush with a rolling pin until a coarse meal forms, transfer to a shallow bowl or pie plate. Toss in sugar and cinnamon. Cut bread into thick 1 ½ inch slices and place in egg mixture to soak well on both sides, allowing egg mixture to absorb into bread. Then transfer to the corn flake mixture and coat well on both sides. Place a pat of butter in a skillet, once sizzling add bread and allow to cook for a few minutes on each side until golden brown. Transfer to a cookie sheet and once all slices have been browned in skillet transfer to a 300F (150F) oven for 5-7 minutes to cook any egg that didn't brown on sides and to crisp up the topping. Remove slices from cookie sheet, dust with powdered sugar. Cut on the diagonal, arranged on plate and top with fresh berries! ABOUT THIS CHANNEL Hi! Cut lobster tails up the center to expose the meat, with kitchen shears. Drizzle with olive oil. Place on a rimmed cookie sheet and bake for 15-20 mins until lobster meat is cooked through. Set aside and allow to cool. Meanwhile, melt 1 tbsp of butter in a large sautee pan, then add shallots and cook until translucent, add mushrooms and cook until they release their juices. Add sherry, and cook until reduced by a third. About 2 mins. At this point you could allow mixture to cool, refrigerate and store up to 2 days until ready to use. Cut the rest of the lobster's underside tail shell, to remove and expose the full shell and remove the cooked meat. Remove the meat and save the shells for presentation. Roughly chop the meat into bite sized pieces and set aside. In a large skillet melt 2 tbsp of butter until foamy, add the flour and mix with a spoon until a smooth paste forms. Then slowly add the fish stock, whisking until a smooth sauce develops. Then add the mushroom mixture, and the heavy cream. Cook for 1 mins until thickened. Add the salt, pepper and tarragon. Then add the cooked lobster. Spoon the mixture back into the shells, top with cheese and broil until cheese and mixture bubbles. Serve in the shells, along with a tossed salad and crisp glass of Sancerre wine. Bon Appétit! BETH'S EASY TOSSED SALAD Serves 4 INGREDIENTS: 1 head butter leaf lettuce 1 head of radicchio 2 endives, sliced 1 shallot, minced 1 tbsp (15 ml) Dijon Mustard 1 tbsp (15 ml) white balsamic vinegar 3 tbsp (45 ml) grapeseed oil Salt and Pepper to taste METHOD: In a small bowl combine the mustard and the vinegar, slowly add the oil whisking all the while until a smooth emulsion forms. (2 ¼ tsps OR 4g) 1/3 cup (80 ml) warm water (110F-115) ½ cup (100 g) sugar 2 eggs ¾ cup (180 ml) of evaporated milk 2 tsp (10 ml) salt 3 ½ cups (420 g) of flour + ½ cup (60 g) for kneading and rolling out 4 tbsp (60 g) of softened butter ½ cup (50 g) confectioners sugar vegetable oil for frying METHOD: Add yeast, water and sugar in a bowl. In a smaller bowl combine eggs, milk and salt. Mix well. Add this mixture to yeast mixture and whisk to combine well. Then add 2 cups (240 g) of the flour and mix with a wooden spoon until combined, add softened butter in slices and continue to mix. Then add the remaining 1 ½ (180 g) cups of flour. Remove dough from the bowl and turn out onto a well-floured surface. Have ¼ cup of flour standing by to work into the dough in case it is still too sticky. Continue kneading until dough is smooth. Form the dough into a ball. Place in a cleaned out bowl lightly greased with vegetable oil. Cover with a dishtowel and place in a draft free place for 2 hours. (I love to place in my oven, with the oven turned off. It's a great draft-free area! Just make sure none comes along and turns the oven on!) Alternately you can place in your fridge to rise overnight. Once risen, roll out onto a well-floured surface and form into a large rectangle. Cut into 3" x 2" rectangles for frying. Heat 4 inches of oil in a large Dutch oven to 370 degrees. Lower dough into oil with a spider strainer or slotted spoon. Fry dough until golden brown on one side, and then turn and fry until golden on the other side. Remove and allow to drain on a sheet pan lined with paper towels. Dust with powdered sugar. Sautee red onions until soft. Add cherry tomatoes. Cook until they start to break down and release their juices. Meanwhile, set your ravioli to boil in well-salted water drizzled with a little olive oil (this will prevent the raviolis from sticking together). Return to your onion/tomato mixture and add lemon zest and lemon juice. Then add spinach in handfuls until wilted. Season with salt and pepper, and drizzle a bit more olive oil over the mixture until well-coated (about 1 tbsp). Drain raviolis, and place 4-6 in a bowl, and top with the sauce. Place on parchment lined baking sheets. Drizzle both sides with olive oil and season to taste with salt and pepper. Bake eggplant for 7 mins each side and allow to cool (totally fine to do this part in stages as you may not be able to fit all the eggplant in your oven at once!) Allow eggplant to cool. Meanwhile prepare your sauce. In a large sauce pan, add the tomato sauce, garlic, salt and pepper to taste and red pepper flakes. Allow to simmer for 10 mins until sauce sweetens up and reduces a bit. Then prepare the ricotta mixture. In a medium bowl add ricotta cheese, eggs and basil. Then assemble your lasagna. In a large heat safe casserole pan, place a thin layer of sauce on the bottom and distribute evenly. On top place a single layer of eggplant on top of the eggplant spread 2/3 cup (160 ml) of the ricotta cheese mixture and sprinkle ¼ cup (60 ml) of shredded mozzarella cheese on top. Then add another single layer of eggplant and repeat the process creating 3 layers of “Lasagna” in total. The top layer should end with a layer of sauce and some more mozzarella cheese. Bake at 375F/190C for 15-20mins until cheese is melted on top and casserole is cooked through. Garnish with some finely minced basil on top. Serve with a salad and some garlic bread! (recipes below) Enjoy! BETH'S EASY GARLIC BREAD 1 Baguette 5 tbsp (75 ml) butter 1 garlic clove salt and pepper to taste 1 tbsp (15 ml) fresh Italian parsley, minced. METHOD: Place butter, garlic, salt, pepper in a microwave safe bowl. Microwave on high for 30 seconds. The heat from the butter will warm the garlic and release its flavor. Add in the fresh parsley stir to combine. Slice baguette in half, horizontally. Brush the insides with butter. Wrap in aluminum foil and place in the oven at 375F/190C with the lasagna that way it will be ready at the same time! Slice on the diagonal and serve warm. BETH'S CLASSIC HOMEMADE DRESSINGS CLASSIC ITALIAN INGREDIENTS: 4 tbsp (60 ml) red wine vinegar 3 tbsp (45 ml) lemon juice 1 tbsp (15 ml) water 6 tbsp (90 ml) olive oil 2 garlic clove, minced 1 tsp (5 ml) Italian Seasoning 2 tbsp (30 ml) grated pecorino cheese 1/4 tsp (2.5 ml) salt 1/8 tsp (1.75 ml) freshly cracked pepper Serve with: Arugula salad + tomato wedges CLASSIC FRENCH VINAIGRETTE INGREDIENTS: 1 tbsp (15 ml) Dijon Mustard 2 tbsp (30 ml) white balsamic vinegar 3 tbsp (45 ml) grapeseed oil 1 tbsp (15 ml) shallot, minced S + P to taste Serve with: Butter Lettuce+ cheese tray CLASSIC RANCH INGREDIENTS: 1 ½ cup (350 ml) of fat free yogurt 1 cup (240 ml) of low-fat buttermilk 2 garlic cloves 1 tsp (5 ml) celery salt ½ tsp (2.5 ml) garlic salt Fresh cracked pepper 1 tbsp (15 ml) fresh chives 1 tbsp (15 ml) fresh dill 1 tbsp (15 ml) fresh parsley Place in blender and puree Serve with Crudite platter (Cherry tomatoes, snap peas, carrots, radishes) HORSERADISH DRESSING INGREDIENTS: 3 tbsp (45 ml) prepared horseradish 1 tbsp (15 ml) white balsamic vinegar 3 tbsp (45 ml) grapeseed oil 2 tbsp (30 ml) mayonnaise, fat free or eggless works well too 1 tbsp (15 ml) fresh dill, minced 1 tbsp (15 ml) fresh chives, minced S + P to taste Serve on cooled, room temperature roasted potatoes. (Roast 2 lbs (900 g) of potatoes at 425F (218C for 25 mins) CLASSIC CREAMY BALSAMIC VINAIGRETTE INGREDIENTS: 1 tbsp (15 ml) Dijon mustard 1 tbsp (15 ml) balsamic vinegar 3 tbsp (45 ml) grapeseed oil S + P to taste Serve with mixed field greens + sliced pear + candied walnuts + Gorgonzola cheese crumbles. Mix until combined. Coat each side of the steak with the rub on both sides and refrigerate for at least 1 hour. Prepare the dressing by adding the lime juice, chili sauce, fish sauce and garlic. Whisk to combine. Then slowly add the grapeseed oil until combined with the rest of the ingredients and a dressing is formed. Leave at room temperature until ready to serve. Grease grill with oil or grilling spray. Heat grill to medium high. Remove beef from fridge and brush off rub with a paper towel. Grill beef 5-7 minutes on each side until medium rate or 145F with a digital meat thermometer. Allow steak to rest. Place the lettuce in a large bowl and add the mangoes, shallot, tomatoes, herbs, carrots and peanuts. Slice steak against the grain for maximum tenderness. Place in salad, add dressing and toss. As Hollywood prepares for the 89th Academy Awards and the party season hits full swing, we pay tribute to the First Lady of entertaining, ahead of the second part of the Betsy Bloomingdale: A Life in Style auction on 5 April. Read more at http://www.christies.com/features/Betsy-Bloomingdale-and-the-art-of-entertaining-8086-3.aspx ‘Entertaining is not a frivolous endeavour,’ wrote Betsy Bloomingdale in her book Entertaining with Betsy Bloomingdale: A Collection of Culinary Tips and Treasures from the World’s Best Hosts and Hostesses. ‘I believe it is one of the great essentials of life.’ The legendary socialite and philanthropist kept a record of every dinner party she hosted from 1959 until her death in 2016. These notebooks contained lists of her guests, copies of the menus, notes on her choice of flowers, the wine lists and photographic records of place settings. ‘Giving a party or hosting a dinner is in many ways like a performance,’ she explained. ‘You are the producer, director, stage manager, and finally the actor. Dozens of details might go into the simplest occasion.’ Born Betty Lee Newling on August 2, 1922, in Los Angeles to Australian émigré parents, she married Alfred Bloomingdale, heir to the New York department-store fortune and co-founder of the Diners Club, in 1946. According to one newspaper’s obituary, throughout her life ‘she remained the dazzling queen of a beau monde that straddled Hollywood, the White House and the ateliers of Paris.’ When the great and good arrived at the Bloomingdales’ sumptuous Holmby Hills home in Los Angeles, it was the immaculately attired Betsy who made a point of personally greeting them. This applied whether the guests were close friends such as President and Mrs. Ronald Reagan, members of Hollywood royalty such as Jimmy Stewart, Cary Grant, Frank Sinatra and Joan Crawford, titans of business and politics, or the ‘natural conversation starters’ — such as ‘a professor at a nearby university or a local artist’ — she regularly invited along to spice up conversation around the dinner table. ‘Always introduce early arrivals to one another,’ Bloomingdale advised, ‘and if they’ve never met, add a detail or two that will start them talking. A skilled hostess knows how to make this look natural.’ Betsy Bloomingdale described a party as being like ‘a dance between hostess and guests, with everyone contributing something to make it a success.’ Success, however, relied on the adherence to certain rules, which included looking the other way when spills or breakages occurred, and insisting on ‘French leave’, which was the practice of guests not making a great fanfare if they had to depart early. Kirk Douglas was one regular guest who appreciated this relaxed approach. ‘Kirk will be the first to admit that he has a reputation for leaving parties early,’ Bloomingdale revealed in her book. ‘Since he’s an old friend, I felt I could say, “Go ahead and leave when you want to. Just don’t say goodnight”.’ ‘Everyone who was anyone in Los Angeles society congregated around Betsy Bloomingdale,’ observes Gemma Sudlow, Head of Private & Iconic Collections at Christie’s. An icon of style as well as a tireless entertainer, she ‘reigned supreme within southern California,’ adds the specialist. ‘There was a perfection that surrounded her in every aspect of the way in which she lived.’ Those fortunate enough to cross the threshold of the William Haines-designed home she shared with her husband on Delfern Drive off Sunset Boulevard were, says Sudlow, offered ‘a sense of who Betsy Bloomingdale was — which is to say fabulous in every respect’. In 2008, when she was well into her eighties, Bloomingdale told Vanity Fair that ‘good food, generous cocktails, a little night music, and after-dinner games all make for a deliciously delightful evening… And a mixture of people with some marvellously wacky guests is also nice.’ There was no great secret, she insisted, to entertaining successfully. ‘You can have all the money and privilege in the world and possess no style,’ she explained. ‘You can spend a fortune on the most elaborate parties and leave your guests feeling bored and let down. Real style comes from within.’ When it came to style, Betsy Bloomingdale was, of course, out on her own. A permanent fixture in annual ‘best dressed’ lists, she championed Dior, as well as Valentino, Chanel, Courrèges and Givenchy. She documented what she wore with the same diligence with which she recorded her lunches and dinners — in her case, lots of colour, particularly red. Detailed notes were kept not only of when and where each gown had been worn, but also with which accessories, such as earrings and belts. In 2009, High Style: Betsy Bloomingdale and the Haute Couture at the Fashion Institute of Design and Merchandising in Los Angeles displayed 60 of her gowns. At the show’s opening, Valentino succinctly described Betsy Bloomingdale as ‘the last of the great women of style’.

METHOD: Cook pasta according to package directions. Meanwhile, in a large sautee pan heat 1 tbsp olive oil in a pan, brown sausage until cooked through. Drain onto a plate lined with paper towel. In a large pot heat the second tablespoon of oil in a pan. Saute onion, carrot and celery until tender, 5-8 minutes. Add tomato sauce and garlic and 1 tsp salt and pepper to taste. Drain pasta and add to the sauce pot. Toss to coat, transfer mixture into a large heat safe casserole dish. Top with cheese. Place casserole under he broiler for 2-4 mins until cheese is golden brown and bubbly. Top with freshly chopped parsley. Serve “oven to table” with red pepper flakes on the side.
